The sisters’ flagship wine, “Coenobium” is a blend of Trebbiano, Verdicchio, and Malvasia, harvested together and co-fermented without added yeasts or temperature stabilization. It is aged on its fine lees in steel and fiberglass tanks and bottled just before the next harvest without fining or filtering. This natural concentration results in a wine of exceptional mineral-driven tension, with a powerful smoke-iron interplay underpinning notes of green apple, fennel frond, and honey. While Coenobium and Ruscum can diverge quite significantly in character depending on vintage, in 2024 they show a through-line of freshness wed to inner warmth and an undercurrent of notable saltiness
