The rogue (and rouge) side of Champagne — 100% still Pinot Noir crafted from 45-year-old, low-yielding vines. In the cellar, nine day sof maceration and fermentation with native yeasts in stainless steel vats is followed by 12 months of aging in oak barrels. Notes of blackberry and violet are matched with supple tannins and a savory finish.
