Pillot’s outstanding Aligoté comes from a parcel in Remigny planted in 2000, and Jean-Marc gives it a proper élevage in previously used oak barrels for a full year, thereby lending it more complexity and a subtler texture than would be achieved with a curt passage in steel. Notes of seashell-like minerality complement slightly creamy yet intensely bright fruit.
